- 1). Make a note of the date you planted your potatoes. They mature in 100 to 120 days, on average. Small varieties take as few as seven weeks to ripen. If you know the average length of time your potatoes take to grow, use that as a guideline for harvest, instead.
- 2). Check the potato plant leaves as they begin to turn yellow. When the foliage becomes dry, dig the tubers out with a garden fork.
- 3). Rub the potato skin with your thumb. If the peel stays in place, the vegetable is ready for consumption or storage. If the skin peels off, place the potato in a warm and well-ventilated area until the skin sets.
