Brush the outside with olive oil
Brush the outside of the pork roast with olive oil, to help it brown and to keep the exterior moist. Then add your choice of seasonings. - 2
Do not add water to roast pan
Roast in a roasting pan at 350 degrees, turning the loin several times as it roasts, to help it cook evenly. DO NOT add water or liquid to the pan, because oddly enough, adding liquid will dry out the meat. - 3
Use a meat thermometer
Use a meat thermometer to keep close watch on the roast's internal temperature. When it reaches 145 degrees, remove it from the oven. Place it on a platter and cover loosely with foil. Let it stand for 10 minutes before slicing. As it rests, it continues to cook and the juices redistribute throughout the meat. - 4
Slice roast across the grain
Slice the roast into thin slices, across the grain and serve. When the roast is sliced this way, the grain of the meat will be shorter, thereby making it more palatable and tender.
