Microwave Turkey and Corn Fajitas Recipe



These tasty turkey fajitas were shared on our forum.  Make them with turkey or chicken.

Serve these fajitas with Easy Mexican Rice and refried beans.

Lighten the fajitas a bit more by using low fat sour cream and a lettuce wrapper instead of the tortilla.

Ingredients
  • 1/2 cup corn kernels, cooked
  • 1 medium onion, sliced into thin rings
  • 1 small green bell pepper, cut into thin strips
  • 1 clove garlic, finely chopped
  • 2 teaspoons olive oil 1/2 teaspoon ground cumin
  • 1 cup chunky salsa
  • 2 cups shredded cooked turkey or chicken
  • 4 8-inch flour tortillas
  • 4 tablespoons sour cream, optional
  • 4 tablespoons guacamole, optional

  • Prep Time: 15 minutes
  • Cook Time: 10 minutes


  • Total Time: 25 minutes
  • Yield: Serves 4


Preparation

In a 2-quart glass measure or casserole dish, place onion, bell pepper, garlic, oil and cumin. Cover with plastic wrap, leaving a vent, and microwave on HIGH 5 minutes. Add corn to onion mixture along with salsa and turkey. Cover with plastic wrap and microwave on HIGH 4 minutes, or until very hot and steaming.

To heat the tortillas, wrap them in a damp paper towel and microwave on HIGH for about 40 to 60 seconds, or until hot and softened.

Divide turkey and corn mixture equally among the warm tortillas and top each serving with 1 tablespoon sour cream and/or guacamole.
