Fresh Strawberry Cake Recipe from Olivenation.com
Eastern Europeans love strawberries and the ones that grow there are the small, sweet variety. If you don't have wild strawberries or grow the European variety, no worries. Any fresh strawberry works well in this cake recipe from Olivenation.com who adapted it from PaulaDeen.com. This recipe is a good way to use up leftover egg whites. The recipe calls for five whites, fresh strawberries and cake flour. I would recommend adding a few drops of red food coloring to your cake batter (not the strawberry cream cheese frosting) so that it is pinker. Typically, when strawberries are cooked in a cake, they turn a tan color, so the food coloring helps. I didn't use food coloring and my cake looks a little tanner than I'd like it to be.
